If you're like me I've been looking for an easy, fast, but protein packed on the go snack that both my husband and I can enjoy, and I keep seeing this recipe on Pinterest far too many times not to give it a try.
Mmm mmm, these bad boys are so delicious, and man approved! I love that there's no added sugar, flour,
or banana, and that I usually have these ingredients on hand. Here's the easy recipe; you'll need about 5-10 minutes from start to finish if that!
1 cup natural peanut butter or any other nut butter (crunchy and almond options are delicious too)
3/4 cup honey or agave
1/2 cup coconut oil (you won't taste it and can leave it out if you choose)
2 tsp vanilla
2 1/4 cup oats
6 tbs cocoa powder
Optional - 1 scoop shakeology powder or your protein powder of choice.
If you're like me I actually measure nothing, and used a metal bowl and put it directly over heat (I have a flat glass stove top) other wise use a conventional pot.
Heat all items EXCEPT OATS over medium to low heat until solids become liquid and blend, do not burn or over head the agave and honey, this took me maybe 3 minutes just to melt the coconut oil and peanut butter. Once melted fold in oats, round into balls or drop on cooking sheet, plate, or glass dish and chill in fridge until cooled. Then good luck not eating every single one of them in one sitting!
I love these, gluten free, dairy free and sugar free, wait aren't these considered vegan?!
If you're in a rush one or two can make a great fill in breakfast or post gym snack without ruining your diet, who's kidding these are a great snack! AND if you have allergies you can totally tweak this recipe with gluten free oats, and whatever form of "butter" you use. You can also swap out some ingredients for molasses or maple syrup, and quinoa or rice crispies, the possibilities are endless.
